There’s something about spring that makes me want to lighten everything up a little—including my coffee.
As a former barista, I’ve always loved experimenting with flavors at home. Lately I’ve been leaning into slower, more intentional routines. Iced drinks in the sunlight, a few quiet minutes in the morning, and simple little upgrades that make everyday coffee feel just a bit more special. It’s the same kind of slow, intentional routine I talked about in my cozy day in my life post—just with a little seasonal upgrade.
These homemade coffee syrups for spring have been one of my favorite ways to do that.
They’re easy to make, use simple ingredients, and completely transform your daily coffee—whether it’s a quick iced latte before work or a slower weekend moment at home.
Today I’m sharing five of my go-to spring syrups:
- Honey Rose (soft + floral)
- Blueberry (fresh + slightly unexpected)
- Brown Sugar Vanilla Bean (cozy + classic)
- Strawberry (light + seasonal)
- Orange Vanilla (bright + creamy citrus)
If you’ve been loving simple, cozy coffee moments lately, these syrups pair perfectly with the drinks I shared in my spring coffee recipes at home post.
☕ Before You Start (Base Method)
All of these homemade coffee syrups for spring follow the same simple formula, which makes them really easy to customize once you get the hang of it.
Basic Ratio:
- 1 cup liquid
- 1 cup sweetener
Simmer, infuse flavor, strain (if needed), and let cool.
A small tip that makes a big difference:
I like using a mix of sugar + honey for a softer, more balanced sweetness—especially for floral syrups like honey rose.
Once you have a few syrups on hand, it completely changes how easy it is to make café-style drinks at home.
🌹 Honey Rose Syrup
(soft, floral, and slow)

Ingredients:
- 1 cup water
- ½ cup sugar
- ½ cup honey
- 1–2 tsp culinary-grade dried rose petals (or 1 tsp rose water)
- ½ tsp vanilla extract
Instructions:
- In a small saucepan, combine water, sugar, and honey over medium heat
- Stir until fully dissolved
- Add rose petals and let simmer for 3–5 minutes
- Remove from heat and let steep for 10–15 minutes
- Strain out petals and stir in vanilla
- Let cool completely before storing
How I use it:
This one feels really soft and elevated—perfect in an iced latte or even a dirty chai if you want something a little different.
I especially love this one in a simple iced latte—it adds just enough floral sweetness without overpowering the coffee, like the drinks I shared in my spring coffee lineup.
