What’s in My Ideal Greek Chicken Bowl
Here’s my go-to combo — but you can totally make these your own:
- Juicy seasoned grilled chicken
- Fluffy brown rice or quinoa
- Marinated chickpeas
- Crisp English cucumbers
- Cherry tomatoes
- Red onion
- Black olives
- Feta (a must, obviously)
- Herbs — parsley, dill oregano

🍋 Greek Chicken Bowl Recipe (with Marinated Chickpeas + Homemade Tzatziki)
Ingredients
Chicken Ingredients:
- 2 chicken breasts
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1–2 tsp oregano
- Salt & pepper
Marinated Chickpeas:
- 1 can chickpeas, drained + rinsed
- 1–2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- A pinch of crushed red pepper
- Salt + pepper to taste
For the Bowl:
- Cooked brown rice or quinoa
- English cucumber, chopped
- Cherry tomatoes, halved
- Red onion, diced
- Black olives
- Feta cheese
- Fresh parsley or dill
Homemade Tzatziki Ingredients:
- Plain non-fat Greek yogurt
- Drizzle of olive oil
- Squeeze of lemon juice
- Fresh dill, chopped
- Diced cucumber
- Garlic powder
- Salt
Instructions
1️⃣ Marinate the chicken
Mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Coat chicken and let it marinate — 30 minutes if you have time, but even 10 helps.
2️⃣ Prep the marinated chickpeas
Combine chickpeas, olive oil, red wine vinegar, oregano, crushed red pepper, salt, and pepper. Let them sit so they soak up flavor.
3️⃣ Make the homemade tzatziki
Stir together Greek yogurt, olive oil, lemon, dill, diced cucumber, garlic powder, and salt. Chill while everything cooks — it gets even better as it sits.
4️⃣ Cook the chicken
Grill until fully cooked. Let rest, then slice.
5️⃣ Build your bowl
Add rice or quinoa as your base. Top with chicken, marinated chickpeas, cucumbers, tomatoes, onion, olives, and feta.
6️⃣ Finish with tzatziki + herbs
Spoon over plenty of your homemade tzatziki, add a scoop of hummus, and sprinkle herbs on top. Enjoy every bite.
Variations & Ideas
One of the reasons I love this simple healthy recipe is how customizable it is:
- Swap chicken for shrimp or salmon
- Try cauliflower rice for a lighter bowl- or do half cauliflower rice and half regular rice, my personal fav
- Add roasted peppers or zucchini
- Turn it into a wrap or stuffed pita
