
We just came off a major Rhode Island snowstorm — the kind that completely shuts everything down. We ended up with 18 inches of snow, nowhere to go, and were basically stuck in the house for two full days. As much as storms like this can feel overwhelming, there’s something about being snowed in that forces you to slow down and lean into all the cozier routines at home– the kind of days where staying in, cooking something comforting, and enjoying the moment feels like enough.
When days like this hit, I immediately start thinking about snow day meals — the kind of cozy, comforting recipes that simmer on the stove and make the house feel warm while the snow piles up outside. For me, that almost always means a large pot of chili. It’s easy, filling, and perfect for warming up after shoveling or just being stuck inside all day.
This healthy chicken chili is one of my favorite winter comfort food recipes. Lately I’ve been focusing on simple, nourishing meals that are easy to prep ahead and still feel comforting, especially during colder months.It’s lighter than traditional chili but still hearty, packed with protein, veggies, and bold flavor. It’s the kind of cozy chili recipe that’s perfect for inclement weather, meal prep, or lazy winter weekends at home.

Ingredients
Healthy Chicken Chili
- 1 lb Ground Chicken
- 2 tbsp Olive Oil
- 2 Cloves of Garlic, Chopped
- 1 Yellow Onion, Diced
- 1 Can Diced Green Chiles
- 1 Jalapeño, Diced (remove seeds for less heat)
- 2 Cans Beans (any kind you like), Drained & Rinsed
- 1 Cup Frozen Corn
- 1 Zucchini, Diced
- 1 Yellow Squash, Diced
- 6 Cups Low-Sodium Chicken broth (can do part chicken broth and part water
- Taco Seasoning (store-bought or homemade)
- Juice of 1 Lime

Optional Toppings
- Fresh Cilantro
- Plain Greek Yogurt- increases the protein per serving
- Shredded Cheese- I like a sharp cheddar
- Crush Tortilla Chips- adds a nice little crunch
How to Make Healthy Chicken Chili

1. Brown the chicken
In a large pot or Dutch oven, drizzle in 2 tablespoons of olive oil. Add the onions and jalapeños to the pot and cook for 3-4 minutes until onions are translucent and soft. Stir in the garlic and sauté for an additional 30 seconds. Place the ground chicken in the pot and cook over medium heat until fully cooked, breaking it up as it browns.
2. Season it
Sprinkle in taco seasoning and stir well. Let it cook for 1-2 minutes to bring out the flavor. I typically use half the packet, but you can add more or less depending on how spicy you like your chili.
4. Build the chili
Blend 1 cup of rinsed beans and half cup of chicken broth until smooth. This will be added to the chili to make it thicker and creamier. Add the remaining 3 1/2 cups of chicken broth, the remaining beans, frozen corn, diced green chilis, zucchini, and yellow squash.
5. Simmer
Bring the chili to a gentle boil, then reduce heat and let it simmer uncovered for 20–25 minutes, stirring occasionally, until the veggies are tender and flavors are blended. The longer you are able to simmer the more the flavors will come together.
6. Finish with lime
Stir in the juice of one lime right before serving for a fresh, bright finish.
How I Like to Serve It

I usually top this chili with:
- A dollop of plain Greek yogurt instead of sour cream
- Fresh cilantro
- A little shredded cheese
It’s cozy, filling, and exactly what I want on a cold winter night.
